With her vast experience working in the hospitality industry and her love for good food, Eva Bolivar decided to train herself in the Culinary Institute of America and become a Chef. After many years of hard work and culinary accomplishments, she decided it was time to fulfill her dream and moved to the island of Vieques, where she opened a small hotel and restaurant. After catering lots of weddings and private parties, Chef Bolivar realized the need of a full service catering company on the island and that was how Above and Beyond catering was born.

Chef Bolivar most recent and biggest achievement was to be chosen as one of the top chefs of Puerto Rico, this honor included an Invitation to participate in the Aspen Food and Wine Classic, this event, is one of the most prestigious food shows in the world. In addition, Chef Bolivar culinary artistry was featured in the Food & Wine Magazine issue of June 2007.

Whenever she is inquired about what she considers as her mayor achievement in life, she will undoubtedly respond “moving to Vieques and doing what I love most, - Cooking and having people enjoy it”.
 

During the Olympic Games held in Atlanta Georgia, The Government of Puerto Rico hosted a Restaurant, where guest were catered to by invitation only. Chef Bolivar was still attending school in the Culinary Institute of America, and honored by the invitation to participate and serve as an assistant Chef at the Club Puerto Rico restaurant.
 

Another important period in her career was the one where Chef Bolivar was in charge of all of the cuisine and entertainment activities that were held at the governor’s mansion. These included directing all activities related to the gathering and entertainment of former President of Russia, Michael Gorbachov and George Bush Senior, as well. She was accountable to attend and direct coordination efforts to render all parties and special functions that were given in the governor’s house, ranging from 2 guests to 2,000 guests.
 


Eva Bolivar Catering Services was established and became one of Puerto Rico largest and most prestigious catering companies, servicing the local market.  Its core objective for services was driven by the proper organization of all sorts of social activities: private parties, weddings, fundraisers etc. Her coordination, discipline and passion enabled Chef Bolivar to successfully cater these activities attending as few as 10 guests as well as to the largest activity ever coordinated which consisted of 2,500 guests.

It was during this time, that while running her own hospitality business endeavor, Chef Bolivar was chosen as one of the Top Chefs in Puerto Rico. As such, and amongst other renowned Chefs, she was honored to receive an invitation to participate in the Aspen Food and Wine Classic of 2007. That same year, her culinary artistry and savors was featured in June issue of the Food and Wine Magazine. In 2008, she was once again invited to participate in the Aspen Food & Wine Classic, by introducing samples of her Tropical Chipotle sauce for the selected menus.
 

Her passion for the ocean leads Chef Bolivar, to join efforts with a partner and diversify her culinary and island enjoyment offerings. They have together launched a boat charter experience in the beautiful Vieques Island surroundings. Guests will embark in a one day culinary adventure at sea, onboard a fancy, 28 feet Italian made power boat. Upon completing a couple of hours of beach hopping and snorkeling; Chef Bolivar will host guests at a deserted beach and serve you a scrumptious lunch, snacks and drinks.
 
Guest may well opt for having her cater your activity and provide a boat for your guest.

After catering lots of wedding and private parties in Vieques, Chef Bolivar realized the need for a full service catering company on the island and decided to embark in providing specialized services. That is how Above and Beyond Catering came to life. In light of the reputable culinary expertise of Chef Bolivar and her continued evolution within the hospitality industry, this is now the only full service catering company on the island.
