Arborio rice is cooked in vegetable broth, with fresh spinach, then it is formed into small pancakes and breaded with fresh Parmesan cheese

Shredded prosciutto and our homemade béchamel sauce are seasoned with Caribbean nutmeg and local spices then mixed into a creamy tasty batter and fried into mouth watering croquettes

Fresh pumpkin is boiled with local spices and a mire pox, then puree into a creamy consistency, then topped with crunchy apple croutons .

Angus Beef Tenderloin with a Red Wine and Wild Mushrooms Sauce


Beef Tenderloin is seared and cooked until medium rare, then topped with a mixture of wild mushrooms and a traditional red wine and demi glace sauce

Roulade of Chicken Breast filled with Eggplant and Roasted Peppers with a Basil Cream Sauce


Chicken breast is seasoned and rolled with roasted eggplant and peppers, chorizo, mozzarella cheese then seared and baked, presented sliced and topped with a creamy Basil sauce

Half a Lobster with a Lemon Dill Champagne Butter Sauce


Caribbean Lobster grilled to ,then topped with a sauce made of fresh lime juice, champagne and butter


Rice Pilaf with Pine nuts and sauté leeks


Rice cooked in home made chicken broth, then stir fry with fresh leeks pine nuts and butter


Polenta squares


Corn meal is cooked with home made stock and fresh herbs, then sprinkled with parmesan cheese, and more fresh herbs


Fresh Asparagus with Roasted Tomatoes


Fresh asparagus are topped with roasted tomatoes vinaigrette

Salad of mixed greens with Walnuts, grapes and a Balsamic Vinaigrette


Mixed greens are smothered with our flavorful vinaigrette made of fresh aged balsamic vinegar, mustard, garlic, a bit of sugar, then topped with “ Blue Cheese” and walnuts.
